THE SPICES OF LIFE
If cooking is your passion you might be giving your diners more than what appears on their plates.

 

Common pepper is reputed to have properties as a tonic, a stimulant, an insect repellent, and a cure for a low sex drive. It is widely known as "the king of spices." Cardamom ("the queen of spices") is used to flavor curry, bread, and coffee--and to cure indigestion.

 

You're probably familiar with garlic as an anti -vampire measure (results have never been clinically verified), mint as an ingredient in toothpaste, and perhaps even ginger as a cure for nausea. But did you know that coriander cures conjunctivitis, nutmeg is hallucinogenic, rosemary is a memory refresher, turmeric purifies the blood, and cumin keeps chickens and lovers from wandering? Learning about and using spices advantageously is an on going source of experimentation and revelation.

COCA-COLA ADDS POWERade

 

With diet aware people calling for an end to sugary soft drinks, is Coca-cola running scared? Probably not, but they are adding new eggs in an already full basket.. Well, not eggs actually, but a new drink called POWERade OPTION. It's a low calorie, 10 calories per 8 oz. bottle, and aimed at active people seeking hydration for any reason throughout the day. As a "Sports" drink it provides electrolytes and B-complex vitamins at levels comparable to regular POWERade, but with 80 percent fewer calories than Gator. POWERade OPTION is sweetened with a blend of Sucralose, Ace-K and HFCS and comes in strawberry, black cherry, and lemon flavors.

 

What makes POWERade OPTION different?  Coca-Cola's advertising introduction is offering a money back guarantee. According to the company, if consumers don't agree that new POWERade OPTION tastes great, they will receive a full refund.

 

So they sent me three bottles to try and if I had paid for it, I might have returned it for that refund. It's very sweet and has a metallic aftertaste. That's just the opinions of those in my household. You might like that sweet flavor and I'd suggest you test it yourself and decide whether it's for you. 3. RECIPES IN SEASON

 

Speaking of Coca-Cola, did you know that there are several recipes for different Coca-Cola products?

 

1. Cook a brisket with Coca-Cola and supposedly the ingredients in Coca-Cola will give it a delicious flavor and prevent the brisket from shrinking..

 

2. Use 1 (10-12 oz.) can of coke, diet or regular, and mix it into a box of chocolate cake mix, (don't add eggs, milk, or water). Bake as directed on the back of the cake mix box. It makes the moistest chocolate cake ever.

 

3. For left over Bar-B-Cue chicken or steak put the meat in a pan with a can of coke and reheat in the oven, the meat stays extra tender without ruining the grill flavor.

4. For super tender steak, marinate the steaks in Coca-Cola before barbequing; it works as a tenderizer and is supposedly better (and cheaper) than commercially prepared meat tenderizers.

5. When cooking chicken in a Dutch oven or Crock Pot add up to 12 pieces of chicken, 1 bottle (36 0z.) Catsup, 20 oz. Coca-Cola. Cook in Crock Pot until Chicken is tender and comes off the bone easily…4 to 5 hours on low. In a Dutch oven, heat to 350 degrees, cook for 30 minutes or until chicken comes off the bone easily.

6. Do you like spicy Coca-Cola chicken or meat? Combine 1 cut up frying chicken, 1 cup of chili de arbol, (dry red chilies) 1/2 cup of brown sugar, 2 cans of coke. Fry chicken in a pan—until half done. Remove from pan--to pan add 1 can of coke, brown sugar, and crushed up chilies--bring to a boil. Add chicken and simmer on low for 20 minutes—save  a little of the reserve to add if the liquid evaporates. Serve over white rice.

4. COOK BOOK REVIEW:  A REVOLUTION IN EATING

 

If you like history, you'll enjoy James E. McWilliams book, A REVOLUTION IN EATING; How the Quest for Food Shaped America. Williams, a professor of history at Texas State University, takes the rer through the attitudes, tastes, and cooking techniques that began in colonial America and shaped who we are and what we eat. He delves into foods eaten by Puritan families, Iroquois Indians, and people in slave kitchens. One anecdote deals with the reactions of European settlers who initially thought Indian corn was food only fit for swine. But it soon became a staple in the colonial diet. Domestically brewed beer came to symbolize solidarity and loyalty to the patriotic cause of the Revolution. This new beer was an extreme departure from all things British and spurred tr among the colonies that help integrate colonial habits and tastes.
