NON-INVASIVE OPTICAL TOOLS PROMISE
ALZHEIMER'S DETECTION IN EARLY STAGES
Building upon a stunning recent discovery that Alzheimer's disease can be
detected early by looking for telltale proteins in the eye, researchers have
developed a pair of optical tests that can potentially diagnose the disease in
its beginning stages. Such tests may improve patients' chances to start
treatment earlier, and also speed development of new Alzheimer's drugs.
Researchers from Harvard Medical School showed that the specific proteins, which are a hallmark of Alzheimer's disease, are also found in the lens and its surrounding fluid. They're similar to those in the brain. They also produce a very unusual cataract, formed in a different place in the eye than common cataracts not associated with Alzheimer's. Testing is accomplished with non-invasive techniques that are still in the tryout stages. Stayed tuned to these developments as they are introduced into the medical community.

2. NEW PRODUCTS – REYNOLDS SLOW COOKER LINERS
Reynolds is never foiled when it comes to introducing new products. Their newest product is Slow Cooker Liners that are more like a heavy plastic than a foil liner that make the job of cleaning out a Slow Cooker a snap. The slow cooker reduces the time it takes to create a meal, but the clean up has made up for that time loss. So Reynold's Slow Cook Liners to the rescue.
The heavy plastic bag-like product is designed to fit either or both the round and oval shaped
units between 3 and 6.5-quart capacity. Once the cooking is finished and the cooker has cooled, you remove the liner and dispose of it. The liners retail for about $2.49 for a box of four and a recipe pamphlet.

With the Jewish holidays under way this month, Manischewitz Food s has introduced a few new products and recipes. Traditionally, gefilte fish is flavored with red or white horseradish. But now Manischewitz had introduced a line of creamy horseradish sauces with different flavorings. There are horseradish sauce with Wasabi, with Dill, with Lemon, and the plain original creamy horseradish sauce. They also have canned macaroons with different flavors. Look for these in your grocer's counters.

Matzo balls always go with chicken soup, but they are delicious when added to brisket or other roasts.
2 tablespoons oil
2 eggs, slightly
beaten
1/2 cup Manischewitz Matzo Meal
1 teaspoon salt
2 tablespoons soup stock or water
Mix oil and eggs
together. Mix and add Manischewitz Matzo Meal and salt. When well blended, add
soup stock or water. Cover mixing bowl and place in refrigerator for at least
twenty minutes. Remove the matzo mix from refrigerator and form into small
balls about 1" diam. Using a two or three quart size pot, bring salted
water to a brisk boil. Reduce flame drop balls into the water. Cover pot and
let cook 30-40 minutes. Have soup at room temperature, or warmer, and remove
matzo balls from water to soup pot. When ready to serve, allow soup to simmer
for about five minutes. Recipe makes eight balls.
Select a fresh (not pickled) beef brisket 4 to 6 lbs. Trim away as much fat as possible. Briskets shrink during cooking so allow a large enough brisket for the servings needed.
1 4- 6 lb. fresh beef brisket
1 tbls olive oil
1 large onion (red or yellow) thinly sliced
Manischewitz Brisket and steak seasoning to taste
1 lb. small peeled carrots or 6 large carrots sliced
3-4 red potatoes peeled and cut into halves.
I can cranberry sauce either jellied to whole berry
Matzo balls, pitted prunes, raisins optional
In a large roasting pan, heat olive oil and sauté onions until lightly browned over a medium heat on stovetop or in oven. Add brisket and lightly brown on both sides about 15 minutes. Add seasoning, carrots, potatoes, cranberry sauce, and about 1/2 cup water. Cover pan and roast in oven about 2-12 to 3 hours or until soft when tested with a fork. Meat will shrink in size. Add optional matzo balls, prunes, and/or raisins to heat through about 1/2 hour before roasting is finished. Add a little water if necessary to keep pan moist and to yield gravy.
Coconut macaroons are a staple desert of the foods served on holidays. Store bought ones can often be soggy and relatively tasteless. Making your own is simple and I've provided two different recipes. In either recipe you may wish to add raisins, or cinnamon and nuts, or dried cranberries to the dough before shaping the macaroons.
1 14-oz. can of sweetened condensed milk
2 teaspoons vanilla extract
1 tbsp. water
8 ounces (2 cups) desiccated coconut
Add vanilla and water to the condensed milk and stir until thoroughly mixed. Add the desiccated coconut and mix thoroughly. Allow this mixture to stand for 2 to 24 hours or longer (stirring occasionally) to allow the coconut to rehydrate.
With a spoon or portioning scoop form approximately 1" diameter cookies and bake at 350°F on parchment covered baking sheet for about 12-14 minutes until light golden brown. Slide parchment onto wire rack to cool. This recipe makes about 18 cookies.

2 3/4 cups macaroon coconut
1 1/4 cups granulated sugar
Egg whites sufficient to make a smooth paste (about 3 lightly beaten)
1 tbsp. corn syrup
1 tsp. vanilla
Put the coconut, sugar, egg whites and corn syrup into a kettle and place over
hot water. Stir briskly until a smooth paste is formed. Remove from the heat
and, if necessary, add just enough additional egg white to make a paste of the
proper consistency. Add vanilla. Fill a large pastry bag, fitted with large
star tube and pipe out macaroons on cookie sheets covered with baking
parchment. Bake at 350 F. for 8-10 minutes. Remove macaroons just before they
have cooled completely. Yield 3 1/2 dozen.
To get that flowery look to your macaroons, use a star tube on a pastry bag and start with your arm twisted to the left and in toward your body. As you extrude the dough, bring your hand around in a circle, tucking your elbow in, so that the dough will twist and then bring bag upwards to form a peak. When the cookie is baked, the ridges in the swirl design should become golden brown.
